Caudomato is the name of one of our vines. In Occitan (an old south of France language) “Caudo” means warm and “Mato” means bush or garrigue.
It’s named like this because this very old vine (80 years old) is located in the middle of the garrigue at 350 meters of altitude and facing south. During summer the temperature can easily go over 40°C!
In the area you have more chances to meet a wild boar than a human! The zone is really isolated and wild. It is very representative of the environment we are used to work in. Basically a very dry ground composed of brown schist’s, a lot of sun, the nature and its wild flowers and our very old vines.
While tasting it you will understand why we consider this wine as the most representative of our wine region; full of fruits and sun! The nose reveals plenty of flowers and fresh red fruits aromas followed by a crunchy attack in mouth highlighted by gourmands’ tannins.
We advise to refresh it slightly (one hour in fridge) and pairing it with Mediterranean cuisine as well as grilled meats.
