The Winemaking process
The winemaking process is definitely the most technical, sensitive and stressful part of the job. During two to three month from the start of the harvest, often at the beginning of September anf finishes by the end of November or mid-December, it is a day to day job including permanent control on the evolution of the wines in the tanks.
Working upstream in the vines to have the best grapes is one part, making the wine is really something else and much more determinant for the final product. It is during this process that we decide on every single parameter that will make the make going this or that way. We are assisted by an oenologist that makes the chemical tests to help us decide on specific technical decisions.
